The grapes to produce our Serprino come from two vineyards planted in 2003 and 2007. The little plants called Fedit 8 C.S.G Prosecco-Serprina, were acquired in the famous cooperative “Vitis” of Rauscedo. This “clone” has been obtained with the hard work of research of Mr. Tocchetti Giuseppe inhabitant in Carrara S. Giorgio (abbreviation C.S.G of the clone). Into old vineyards of grape Prosecco of our Hills he found different peculiarities and characteristics obtained in the many decades of life on the Euganean territory. The scent is fresh and lively. The taste is delicate with notes of mature fruit. To propose in any moment for its versatility, this wine transmits a pleasant joy.
Process of wine making:
The grape harvest is anticipated to keep a right acidity. The grapes pass into the Destemmer – Crusher and after to the immediate soft pressing. Cleansing of must after decantation with low controlled temperature and successive start of fermentation that will continue to 16°C. After approximately 9-10 gg decanting and removal of dregs. In the successive weeks the “wine-base”, that stay on its noble dregs, is ready and to start the refermentation of the Charmat method.
Alcohol level: 11.00% vol.
