This wine is obtained from the best grapes of Merlot, Cabernet Sauvignon and Franc cultivated in our vineyards at “La Mincana” using all our experience and passion. The hectare grapes quantity is very low and about 8/9000 kg in different years.
Its best coupling is to be served with roast, game and old cheeses or to be tasted alone ……………………………again and again.
Process of wine making:
The grape harvest is made with the grapes just over-mature. The grapes pass into the Destemmer – Crusher and after start the fermentation with a controlled temperature of 26-27 °C, maceration with marcs of 10-12 days with a daily delestage operations and partial removal of grape seeds.
After decanting and pressing , the 01/01wine stay to refine itself into 4500 lt oak barrel and into 225 lt ones.
Naturally stabilized, not filtered before bottling.
Alcohol level: 14,00 % vol.
